<p>I made my <a href="http://thecookfulyouth.wordpress.com/2006/09/07/cinnamon-squirrel-bread/" target="_blank">cinnamon squirrel bread</a> and decided not to make two loaves, just one big one.</p>
<p>I rolled the dough out into one longish piece of dough and put the cinnamon and sugar on, then carefuly rolled it up so it was a rather long lump of swirled bread. I then swirled THAT into a round <em>thing.</em></p>

<p>I let that rise for about 45 minutes, untill it was double in size. I baked it at 375 degrees for 25-30 miutes, it took longer to bake than two loaves separatly. my thermometer said about 180-190 degrees when it was ready. then I let it cool on a rack and cut it in a spiral. It was awesome.</p>

			<content:encoded><![CDATA[<p>This is a variation of my <a href="http://thecookfulyouth.wordpress.com/2006/09/07/cinnamon-squirrel-bread/" target="_blank">cinnamon squirrel bread</a>.<span id="more-20"></span>For this recipe I used 1 cup of Pacific Chai<font color="midnightblue" face="Verdana, Arial, Helvetica" size="2"><font size="3">™ </font></font>latte mix and 1 cup of hot milk instead of just hot water. If you don&#8217;t have this liquid Chai mix (chances are you don&#8217;t) then you can use any powdered chai mix mixed with about 2 cups of warm whatever.<br />
Start with the sponge,</p>
<ul>
<li>2 c. warm chai drink</li>
<li>2 c. flour</li>
<li>2 tsp. salt</li>
<li>2 Tbs. oil</li>
<li>1-2 Tbs. sugar</li>
<li>2 Tbs. yeast</li>
</ul>
<p>let that rise for about 10-15 minutes. It will be bubbling and will be much larger than you started out with.</p>
<p>If you have a stand-up mixer, then mix on speed 2 for 4-5 minutes adding about 3 cups of flour as you do so. If you don’t have one then you&#8217;re going to have to knead it by hand.<br />
to knead it:</p>
<p>Start by mixing in 1-2 cups of flour; then, when it gets too hard to stir, move the dough to a clean surface with flour on it (so it doesn’t stick). You knead it by pulling one side of the lump of dough over the top and pushing down with the heel of your hand, turning it 90 degrees and doing that again and again. Add about 2 more cups of flour while you do this, until it’s smooth and elastic, usually about 6 or 7 minutes.</p>
<p>Then let the dough rise for about 45 minutes to an hour, until it’s doubled in size. Divid the dough into two equal pieces. Roll each piece out with a rolling pin into a square, then put a layer of cinnamon sugar, or cinnamon and sugar, and however many ground nuts you want. Roll it up and fold the ends underneath it. Let loaves rise until doubled in size again.</p>
<p>Bake at 350 degrees for about 20 minutes. If you have a quick-read thermometer, they should be about 180-190 degrees in the center. Cool on a rack.</p>
<p>This is probably the best bread I have ever made. Half of it was gone by dinner and the rest disappeared shortly after!</p>

<p><strong>Hot Water Chocolate Cake</strong></p>
<p>start with,</p>
<ul>
<li>2 c. flour</li>
<li>2 c.sugar</li>
<li>1/2 c. cocoa</li>
<li>1/4 tsp. salt</li>
<li>1 1/2 tsp. baking soda</li>
</ul>
<ul>
<li>1c. buttermilk</li>
<li>1 1/4 c.oil</li>
<li>3 eggs</li>
<li>2 tsp vanilla</li>
<li>1 c. boiling water</li>
</ul>
<p>Mix the first five ingredients together, then, in a different bowl, mix the buttermilk and oil together. Then pour that into the dry mixture, mixing well. Add the eggs one at a time. Mix in the rest of the ingredients, adding the boiling water last.<br />
Pour into a greased 9&#8243;x13&#8243;  pan and bake at 350 for 35 minutes, or until done.</p>
<p>This is my favorite cake recipe, and everyone else likes it too!</p>

<li>2/3 c. vegitable oil</li>
<li>1 c. sugar</li>
<li>1 egg</li>
<li>1/3 c.  molasses</li>
<li>2-2 1/4 c. flour</li>
<li>2 tsp. baking soda</li>
<li>1 tsp. cinnamon</li>
<li>1 tsp. ground cloves</li>
<li>1 tsp. ginger</li>
<li>and about 1/4 cup sugar</li>
</ul>
<p>Mix all the ingredients in order, then shape the dough into balls and roll them in the extra sugar. Place thm on a cookie sheet on parchment paper.</p>
<p>Bake at 350 degrees for 10-12 minutes, they&#8217;ll be golden brown and cracked on top.</p>
<p>These are sooooo good, and are usually gone in within an hour around here.</p>

<p>I&#8217;ve been making this lately for various occasions and everyone seems to like it.</p>

First you need to make a sponge. You do this by mixing approximately(Not exact, you may need more or less of some things.):</p>
<ul>
<li>2 c. hot/warm water (Too cold and it&#8217;ll take forever and a day to rise, too hot and it kills the yeast.)</li>
<li>2 c. flour, again maybe a little more or less.</li>
<li>2 tsp. salt</li>
<li>2 Tbs. oil</li>
<li>2 Tbs. sugar</li>
<li>2 Tbs. yeast</li>
</ul>
<p>Then you let that rise for about 10-15 minutes. It will be bubbling and will be much larger than you started out with.</p>
<p>If you have a stand-up mixer, then mix on 2 for 4-5 minutes adding about 3 cups of flour as you do so. (When it&#8217;s finished it should be the texture of your earlobe.)<br />
If you don&#8217;t have one the you&#8217;ll need to knead it (hehe, that&#8217;s fun to say).</p>
<p>Start by mixing in 1-2 cups of flour, then, when it gets too hard to stir, move the dough to a clean surface with flour on it (so it doesn&#8217;t stick.). You knead it by pulling one side of the lump of dough over the top, turning it 90 degrees and doing that again and again. Add about 2 more cups of flour while you do this, until it&#8217;s smooth and elastic, usually about 6 or 7 minutes.</p>
<p>Then let it rise for about, I don&#8217;t know, 45 minutes to an hour, until it&#8217;s doubled in size. Roll it out with a rolling pin into a square, then put layer of cinnamon sugar, or cinnamon and sugar. Roll it up and fold the ends underneath it. Let it rise until doubled in size again.</p>
<p>Bake at 350 degrees for about 20 minutes. If you have a quick-read thermometer, it should be about 180-190 degrees in the center. Cool on a rack until, well, cool.</p>

<p>4 eggs<br />
2 c. sugar<br />
3/4 c. oil<br />
3/4 c. unsweetened cocoa powder<br />
2 t. vanilla(I actualy use 1 tsp. vanilla and 1 tsp. almond extract.)<br />
1/2 t. salt<br />
1 1/2 t. baking powder (NOT soda–soda turns this recipe into something icky)<br />
1 1/3 c. flour</p>
<p>Whisk eggs and sugar together. Add oil and cocoa and mix thoroughly. Stir in vanilla, almond extract, salt, baking powder and flour. Bake in a greased 9″x13″ pan at 350 for 20-25 minutes or until the skewer or toothpick can be inserted and comes out clean.</p>
<p>My brother or I make these whenever we have guests and they are always so impressed even though it takes very little time and effort.</p>

This is my first post on my new blog!<br />
I’m Nate, BK’s second son for any one who reads <a href="http://mysisterskitchen.wordpress.com/" title="msk" target="_blank">My Sisters Kitchen</a>, and I’m still learning a great deal from my mom,and her sister of course, so any comments and tips would be greatly appreciated.<br />
I think I’ll start with one of my favorite cookie recipes, oatmeal chocolate chip:<span id="more-1"></span></p>
<p><b>Oatmeal Chocolate Chip Cookies</b></p>
<p>- 3 sticks of butter<br />
- 1 c. white sugar<br />
- 1 1/2 c. brown sugar<br />
- 3 eggs<br />
- 1 1/2 tsp. soda<br />
- 1/2 tsp. salt<br />
- 1 tsp. vanilla<br />
- 3 1/4 c. flour<br />
- 3 c. oats<br />
- about 2 c. chocolate chips(more or less depending on how much you like chocolate)</p>
<p>Mix all the ingredients together, and bake @ 350 degrees for 10-12 minutes or until golden brown.</p>
<p>These cookies will be soft or crunchy depending on how long you let them bake.</p>
